Peel the zest of the lemon and add it to the chopped onion in the processor jar. Now process till the onions and lemon zest are finely chopped. To this mixture add the parsley, sage, olive oil, salt and blend them together till a coarse paste is formed. Meanwhile season the turkey breasts with salt and pepper. Separate the skin and flesh carefully to form a pouch, and spread the paste evenly.

Heat butter in a pan over medium heat and saute 2 bay leaves in it. Once the leaves turn slightly dark, place the prepared turkey breasts on them and roast for about 15 minutes till they get the flavor of the bay leaves. Transfer these breasts to a baking tray and apply a coat of the butter and bake it in a preheated oven at 400 ºF for about 20 minutes. Remove the turkey breast and baste it with the leftover butter and continue roasting for 25 more minutes after reducing the temperature to 350 ºF. Once the breasts have completely cooked, remove them from the oven and place them on a platter.

For the gravy, heat the same pan on the burner and add the flour to it. Stir to cook the flour in the pan's juices till it becomes crusty. Pour the apple brandy to scrape the crusts from the pan and allow it to simmer, by reducing the heat. Now add the apple cider, while continuing to stir and sprinkle pepper and salt to taste.
