Blueberry Waffles from Scratch

  • Unsalted butter, 4 tablespoons
  • Baking powder, 1 teaspoon
  • Frozen blueberries, 1 cup
  • Flour, 1 cup
  • Sugar, ¼ cup
  • Yogurt, ½ cup
  • Milk, ½ cup
  • Egg, lightly beaten, 1
  • Pinch of baking soda
  • Pinch of cinnamon
  • Pinch of salt

Preheat the waffle iron as per the manufacturer's instructions. Put 3 tablespoons of unsalted butter in a microwavable bowl, and melt it. In another bowl, mix flour, baking powder, cinnamon, baking soda, salt, and sugar properly. Take another bowl to beat the egg, and add milk and yogurt to it. Whisk everything properly and then mix the wet ingredients in with the dry ingredients till it's all combined. Take the frozen blueberries and fold them in as well. Stir in the melted butter at the end and mix the batter properly. Now brush the hot waffle iron with some butter. With a ladle, scoop some batter and pour it in the waffle iron; close the lid and let it cook till it becomes golden brown. Read the manual as it will tell you how much time the waffle iron will take. Once ready, place the waffle in a plate with a dollop of butter, and pour maple syrup on top before serving.
