Rubs are considered as the heart and soul of barbecue recipes. It is a unique combination of seasonings, spices, and herbs. It offers an excellent texture and flavor to meat and transforms an ordinary piece into, a heavenly delicious work of art. You can try the following recipes and prepare mouth-watering meals.
Thyme, Mustard, and Pepper
  • Coriander Seed, 1 tbsp.
  • Sweet Paprika, 2 tbsp.
  • Dried Oregano, 1 tsp.
  • Garlic Powder, ½ tsp.
  • Black Peppercorns, 1 tbsp.
  • Brown Sugar, 2 tbsp.
  • Dry Mustard, 1 tbsp.
  • Cayenne Pepper, 1 tsp.
  • Chili Powder, 2 tbsp.
  • Brown Mustard Seeds, 1 tsp.
  • Dried Thyme, 1 tsp.
  • Onion Powder, ½ tsp.
  • Whole Cloves, ½ tsp.
In a small skillet, heat coriander seeds, mustard seeds, peppercorns, and cloves over medium heat. Keep the pan swirling gently, until all the ingredients become fragrant. Then, remove the pan from heat and let the ingredients cool. Once they cool down, grind them in a mortar or spice mill. Pour this mixture in a small bowl. Then, add all the remaining ingredients. Mix well. Store this mixture in an airtight container. You can use it to marinate meats or ribs. It should be marinated for at least 15 minutes, prior to cooking.
Brown Sugar, Pepper, and Celery
  • Paprika, ¼ cup
  • Black Pepper, 1 tbsp.
  • Brown Sugar, ¼ cup
  • Chili Powder, 1 tsp.
  • Onion Powder, 2 tsp.
  • Garlic Powder, 2 tsp.
  • Kosher Salt, 2 tbsp.
  • Celery Seeds, 2 tsp.
  • A Pinch of Oregano
In a small mixing bowl, combine all the ingredients together. Stir them thoroughly and mix well. Using your fingers, break the chunks of brown sugar, if any. Mix evenly to get a smooth rub.
Garlic, Pepper, and MSG
  • Black Pepper, (freshly ground) 4 tbsp.
  • Thyme, 4 tbsp.
  • Curry Powder, 2 tbsp.
  • Cumin, 4 tbsp.
  • Cayenne Pepper, 2 tbsp.
  • Garlic Powder, 4 tbsp.
  • Onion Powder, 1 tbsp.
  • Salt, 2 tbsp.
  • MSG or Other Flavor Enhancer (optional) 1 tbsp.
In a small mixing bowl, combine all the ingredients together. Stir well to mix. You can immediately use this mixture or store in a dark and cool place for several months. This mixture is quite strong and hence, it is not recommended for thin cuts, such as ribs, brisket, etc.
Brown Sugar and Mustard
  • Chili Powder, 2 tbsp.
  • Black Pepper, (freshly ground) 2 tsp.
  • Brown Sugar, 2 tbsp.
  • Dry Mustard, 1 tsp.
  • Ground Red Pepper, ¼ tsp.
  • Ground Cumin, 1 tsp.
  • Salt, 2 tsp.
Place all the ingredients in a mixing bowl. Mix well. Transfer this mixture to an airtight container. You can store it in a cool and dark place for 2 weeks. As this rub contains sugar, it should be used on meats, that cook over low heat for a long time, such as ribs, brisket, or leg of lamb. If it is used for recipes that require to be cooked on high heat, the sugar may get burnt.
