Potatoes are among those versatile vegetables that are used in almost all parts of the world. It can be roasted, baked, boiled, mashed, steamed, pan-fried, and cooked in many other ways. Baking is one of the simple, yet, delicious methods of cooking potatoes.
Bake with Garlic and Herbs
Ingredients
  • Large red potatoes - 4
  • Oregano - ¾ tsp.
  • Basil - ¾ tsp.
  • Olive oil - 1 tbsp.
  • Melted butter - 1 tbsp.
  • Garlic - 2 cloves (minced)
  • Pepper - ¼ tsp.
  • Salt - ¾ tsp.
How to Prepare
Rinse the potatoes and pat dry. Keep the peel on, and cut the potatoes into wedges. Combine the remaining ingredients in a bowl. Toss the potato wedges with this mixture, and spread them on a cookie sheet. Top these wedges with ¼ cup of grated Parmesan cheese, and bake at 425° F, for around 25 to 30 minutes, or till they turn golden brown.
Twice-baked Red Potatoes
Ingredients
  • Large red potatoes - 2 pounds
  • Chopped green onions - 2 tbsp.
  • Skim milk - ½ cup
  • Non-fat chicken broth - 1 tbsp.
  • Butter - 2 tsp.
  • Garlic powder - ¼ tsp.
How to Prepare
Wash and dry the potatoes. Pierce them with a fork, and bake for around 40 minutes (or till they get tender), in an oven that is preheated to 400° F. Take out the potatoes, and allow them to cool. Once cool, cut the potatoes into halves, and remove the pulp. Retain the cup-shaped potato shells for later use. Combine all other ingredients, along with the potato pulp. Fill the potato shells with this mixture. Bake these shells in the oven that is preheated to 400° F, for around 12 to 15 minutes, or till they get browned. Serve these baked red potatoes with a garnish of chopped green onions.
Microwave Method
Wash and dry a large red potato. Remove the eyes and other bruised spots. Pierce the potato with a fork, before placing it on a microwave safe dish. Place the dish in the microwave, and cook on full power, for around five minutes. After that, remove the potato from the microwave, and turn it over, before cooking for another five minutes. Once done, take out the potato and cut it in half. Mash the inner pulp, after adding the required amount of salt and pepper. Top the potato halves with a tablespoon of butter and two tablespoons of shredded Cheddar cheese. Microwave the potato halves for a minute, so that the cheese melts into the pulp. Serve this baked red potato with some sour cream and a tablespoon of shredded cheese.
