Ice cream cake, as the name suggests, has a layer of ice cream in between two layers of cake. This cake, although not well-known in England, is quite popular in America, China, and Australia. It is kept frozen until it is to be served, and just before serving, it is thawed as much as it can be sliced, allowing the layer of ice cream to stay in its solid form. This cake is perfect for family gatherings and parties, as it is loved by kids and adults alike.

Black forest Ice Cream Cake

Ingredients
  • 2 eggs
  • 1 quart vanilla or cherry ice cream (softened)
  • ¾ cup Hershey's cocoa
  • 1 cup buttermilk or sour milk
  • 1 cup all-purpose flour (unsifted)
  • 1 teaspoon baking powder
  • 2 cups sugar
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 3 cups whipping cream
  • 1 cup strong black coffee
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
Preparation

Pack the ice cream into a cake pan, and freeze the covered pan for about an hour or two. Combine the sugar, baking soda, flour, cocoa, baking powder, and salt in a mixer bowl. Mix the coffee, eggs, buttermilk, vanilla extract, and oil together, and add this mixture to the previous mixer bowl. Beat this mixture for approximately 2 minutes in the mixer; it is better if it grows thinner.

Now pour the mix in 2 round cake pans, and bake for half an hour or so. To check, put a tester inside the cake; it is ready if the tester comes out clean. Let the cakes cool down. Place them on a plate, top one cake with the ice cream, and place the other cake on top of this. You can also cut the cakes in layers, and top them with layers of ice cream alternately to create more than 3 layers. Now, take a decorator's tube, cover the cake with cherry fillings, and freeze it again. Take the cake out of the freezer an hour before serving.

Ice cream Cake with Caramel

Ingredients
  • 2 jars hot caramel or hot fudge
  • ½ gallon chocolate or vanilla ice cream
  • 1 (12 ounce) container cool whip
  • 1 package Oreo cookies
Preparation

Crush the cookies in a round cake pan, melt the ice cream, and pour it over the crushed cookies. Place this mixture in the freezer, and let it freeze overnight. Next day, melt some caramel or fudge, and pour it over the hardened ice cream and freeze it again. Spread some cool whip over the cake before serving.

Ice-cream Birthday Cake

Ingredients
  • ¼-½ cups butter (melted)
  • 32 chocolate chip cookies
  • 1 jar fudge topping
  • Strawberries or cherries for garnish
  • 2 quarter ice cream of any flavor
  • Prepared whipped topping
  • 1 package chocolate chips
  • ⅔ cup smooth peanut butter
Preparation

Mash the cookies using a masher, and melt the peanut butter along with the chocolate chips in a pan. Combine the mashed cookies with the mixture of butter and chocolate chips. Place the mixture in the bottom of the pan, and freeze it. Once done, place a layer of ice cream over the layer of cookies and chocolate chips. Then, place another layer of fudge over this, and repeat the layering with another flavor or the same flavor of ice cream. Freeze the cake again until it is firm.
